Fasting time is not a reason to refuse borsch! Lenten borsch can be easily prepared with mushrooms, sprats, sorrel and beans. There are also basic recipes where only vegetables used in traditional meat borsch are required. In order to cook a basic lean borsch, take beets, carrots, potatoes and onions. Wash, peel and cut into thin strips, finely chop cabbage. Pour the tomatoes over boiling water, remove the skin and cut into cubes, crush the garlic. Put potatoes and cabbage in boiling salted water, reduce heat. Meanwhile, heat the oil in a skillet and fry the onions and carrots. After 5 minutes, add beets, vinegar and sugar and simmer for another 7-10 minutes. The last in the pan, put the diced tomatoes into cubes, cover with a lid and keep on fire for another 15-20 minutes. After that, transfer all the vegetables to the pot with potatoes and cabbage, add the garlic and bay leaf. Bring to a boil, remove the foam and turn off the heat.
